Rachel Roddy's Italian recipes for lockdown - MW

Rome went into the door lock 17 days ago. With news of what is happening in northern Italy, we are advised to stay home, leave as little as possible and only do so for essential purchases.

That night, I looked into my cupboard and freezer and made a list of recipes. While words like our resources and talent popped into my head, the recipes were made up of packages of pasta, peas and lentils, boxes of tomatoes and chili peppers, green beans. and mung bean flour, lonely and frozen carrots, is one of my favorite things to cook and eat, the recipes I love to write about here.

The other day, standing by the wall outside a local store, I realized it was my neighbor behind a pale green mask two meters in front of me. We talked about lunch and it turned out we both made minestrones, then chickens for dinner: some recipes for uncertain times, she said. I could have put it better than that.

1. Pasta e broccoli
Not only is it a great recipe we make every week, but it's also a great rule: almost all vegetables, if cooked in this way - until tender and sauteed - form water. pasta sauce.

2. Puttanesca

Four jars, one tin and one pack. Again, an idea as much as a recipe, an idea that can be shaped by the ingredients you have in your fridges and cabinets - and how you like each one.

3. Spaghetti with garlic, oil and chili
A classic classics of Rome, and not just midnight after an evening out.

4. Minestrone

The big soups: incredibly versatile, good endless.

5. Lentils with potatoes, greens and sausages
I make a variation of this dish at least once a week, trying to make enough so that the next day there are leftovers that can be mixed with short pasta.

6. Pancake

I felt the bags of mung bean flour the same way I used to smoke cigarettes: for a while, a spare time. There are countless ways you can top these cakes.

7. Chicken Hunter Hunter
The chicken is brown and then simmered until tender with white wine and a large handful of rosemary, chili and garlic, and the dish ends with a spoonful of vinegar and a handful of olives.

8. Quick pasta

Another great rule and favorite - making a thick soup and cooking pasta in it - can be applied to most impulses.

9. Linguine with squash, eggs and parmesan
The magic of pasta cooking water is revealed in this favorite recipe. I don't call it carbonara or even carbonara - but the idea is the same, the egg and parmesan mixture meet in stir-fries and pasta, along with starchy water, to make sauces.

10. Cabbage

How to bring out the best in cabbage: slice, cook gently with a lot of fat with salt for a long time to serve with sausages.
